Cold cucumber soup with licorice

Ingredients

2 big cucumbers
1 bunch of fresh mint
6 dl cold chicken bouillon
400 g Greek yogurt
2% Raw Licorice Powder
Salt
Pepper
4 slices of licorice brown bread (or ordinary brown bread)
Virgin olive oil

Instructions


Number of servings: 4 pers.

Chop the licorice brownbread into small bits and fry it in oil till they become golden. The brownbread croutons are put on a paper which soaks up the fat until they are crispy. Cucumber, mint leaves, bouillon and yoghurt are blended and tasted with salt and pepper. Serve the soup with brownbread croutons and a sprinkle of licorice powder.
